Red wine Passitivo Appassimento Primitivo, 100% Primitivo grapes, Grapes will have to wilt before harvesting by the method of “squeezing the stem” of the bunch to prevent nutrients, thereby causing natural drying of the plant (referred to as: Appassimento). The bunches are left to dry for about 12 days, losing about 25-30% of their weight in liquid form and concentrating their aroma before harvesting. Fermentation takes place at controlled temperatures, followed by 5 months in American oak barrels and 6 months in stainless steel.
Wine notes Deep ruby red, with a complex bouquet, reminiscent of cherries, raspberries and red grapes. The oak aging process adds a pleasant roasted and spicy aroma. On the palate, it is full of life, supple and well-balanced and has a long finish.
